Lebanese dieting system is wonderful. Everything is very tasty and at the same time very health-giving. Lebanese people prefer healthy foodstuffs - starch, vegetables, fruits, fresh fish and seafood. Poultry is eaten more frequently than meat, and mutton is preferred in the selection of meat. Lebanese inhabitants are indifferent to such favorite in the whole world ingredients as animal fat, butter and sour cream. They do not perfect themselves in sauces but use spices and plants for the seasoning filling their dishes with "green" aroma of healthy food. Vegetables are not fried and boiled but eaten fresh and slightly salted.

All around the world Lebanese cuisine restaurants are very popular among vegetarians. Genuine Lebanese ingredients for the preparation of vegetable dishes are the completely unknown to St.Petersburg inhabitants burgul (wheat initially boiled, then crushed and dried in the sun), lentil nuts, various spices that give a unique, inimitable taste to a dish.

The most famous Lebanese national dish is called "kibby". Experts with skill maintains that "kibby" is nothing but Turkish "kefte" but in Lebanon the name of kefte is given to a quite different dish. Kibby is made of the freshest mutton and the mentioned burgul. Laborious Lebanese cooks pound the meat in a mortar until it transformes into emulsion. It's unknown what do the cooks transform themselves into in the course of this "teadious, lacking inspiration" work (as it considered to be by foreigners with indignation). However the taste of the dish is worth of such sacrifice.

A strange from the point of view of a European person dish "tabuli" is considered to be the most popular salad. Tabuli is ideal for shaurma and dishes of mutton. This peculiar salad consists of burgul mixed with tomatoes, greenery, live oil and spices. Mezze is considered to be a universal dish designated for two or more persons - it includes all the main courses of menu, giving the full notion of Lebanese cuisine diversity.

No meal in Lebanon is complete without bread. Skillful local inhabitants replace a spoon and fork by it, however not recommending foreigners to repeat such a trick.
